Musk duck stuffed with poultry liver pancakes
Ingredients:
● musk duck (1.5 kg)
● poultry liver (200 g)
● onion (1 pc.)
● flour (0.5 kg)
● milk whey (0.5 L),
● egg,
● oil (2 tbsp.)
● spices to taste.
Method:
Wash the duck thoroughly, then dry it with a paper towel. Rub the carcass with salt, pepper, and other spices to taste. Mix the flour with the whey, add the egg, and season with salt.
Then fry the thin pancakes until golden brown. Boil the liver of the bird, twist it in a meat grinder, add the fried onions and spices. Wrap the cooled stuffing in pancakes, grease with egg. Fill the duck with pancakes as tightly as possible.
Place in a baking bag and place in a preheated oven for two hours.
