Fried podbolotniki

● mushrooms,

● onions,

● salt and pepper to taste,

● flour,

● eggs.

Attention! These mushrooms - bolotniki and golovachi (dozhdeviki) – grow in peat bogs. And it so happened that it is the inhabitants of the Western Berezina valley who know this mushroom as suitable for human consumption - in all other areas this type of mushroom is of great concern. The most important thing is not to confuse such a mushroom with a poisonous one, so we do not recommend experimenting on your own. These mushrooms are fried or pickled, but not dried.

Fry and chop the onion finely. Chop the mushrooms and cook for 30-40 minutes. Then put them in a pan with onions on butter or lard. Add salt and pepper to taste. Alternatively, at the end you can add a little flour, 1-2 eggs and mix everything well.
