Ingredients:
● pork shank,
● pork leg,
● beef drumstick (500 g),
● rooster / goose / duck carcass (½ pcs.),
● onion (2 pcs.),
● bay leaf (2-3 pcs.),
● garlic,
● black pepper peas,
● ground pepper, salt.
Cooking
The leg and lower leg should be cleaned and rinsed. Cut the leg in half lengthwise, chop the shin and the bird, put it in a saucepan, pour cold water so that the level is 2-4 cm above the meat, and put it on the fire. When it starts to boil, remove the foam, add vegetables, spices, salt and cook over very low heat until the meat begins to separate from the bones (3-4 hours). When the broth is infused, collect the fat from it. Merge. Separate the meat from the bones, cut large pieces, put them in cups. Season the broth with chopped garlic, salt, pepper to taste, strain, pour into cups and put in a cold place. Add vinegar and horseradish to the jelly.
