Ingredients:
● s/f brains (1700 g.),
● carrots (50 g),
● onion (45 g),
● vinegar 9 % (2 tbsp. l.),
● flour (50 g),
● oil (10 g),
● salt (1 tbsp.),
● ground black pepper (10 g),
● black pepper peas (10 g),
● bay leaf,
● chopped champignons (460 g),
● peasant oil (50 g),
● lemon (100 g),
● ketchup (100 g),
● parsley (100 g).
Method:
The brains are kept in cold water for 2 hours, without taking them out of the water, carefully remove the film from them, then pour cold water, add vinegar, carrots, onions, parsley, bring to a boil and cook until ready at a low boil (10-15 minutes). 5-10 minutes before the end of cooking the brains, put salt, pepper, peas, and bay leaf.
Boiled brains are cooled, cut into slices, sprinkled with salt, pepper, breaded in flour, and fried until golden brown. Serve the dish with lemon.
