Pike cutlets


● pike fillet (600 g)

● lard (80 g),

● onion (1 pc.)

● carrots (2 pcs.)

● potatoes (3 pcs.)

● hen's egg (2 pcs.)

● domestic chicken,

● white bread (1-2 pieces)

● ground black pepper,

● marjoram,

● salt and sugar (to taste).



Prepare the fish broth from heads, fins and bones, add salt and the bay leaf. When the broth is ready, with a slotted spoon take the fish out and cook the domestic chicken in a broth.

Prepare the stuffing: pike fillet, a piece of pork fat, soaked in cold water and squeezed white bread, raw carrots and onions in a meat grinder to grind twice, add the eggs. Add salt and pepper, sugar and oregano.

Make large meatballs.

When the chicken is cooked, get it from the broth and add some chopped potatoes and carrots at the end of cooking, add the cutlets and spices to taste, and cook until soft. Put the cutlets and the broth into a deep dish, serve with fresh herbs.
