Baked goose

Ingredients:

● whole goose (2.5-3 kg.),

● duck fat ("schmalets"),

● onion (3 pcs.),

● buckwheat (150 g.),

● oil.

Method:

Wash the goose, remove the giblets: cut the liver and heart into small pieces, mix well and fry in melted fat. Then, in a preheated frying pan, fry the finely chopped onion, add the fried goose giblets on top. Add the seasoning and simmer until tender.

Cook the buckwheat until half cooked. Stewed giblets with onions, mix with buckwheat. In the carcass of the goose, we put the filling: porridge with giblets. You can sew up the bird or tie the legs with a thread so that it retains its shape during baking. Place in a baking bag. Bake at 180 °C for 1-1,5 hours.
