Ingredients:
● pork (neck),
● salt,
● spices (herbs of provence, rosemary and thyme),
● kiwi fruit,
● sugar.
Cranberry sauce:
● cranberries (100 g),
● small onion (1 pc.),
● honey (1 tbsp.),
● zest of ½ lemon,
● butter (25 g),
● ground red pepper to taste,
● pinch of salt,
● dry red wine (200 ml),
● starch (1 tbsp.).
Cooking
The meat should be well washed and dried, then make small punctures with a skewer, rub with salt, then add a little sugar, pour spices, mash and put it to marinate slightly in the refrigerator for 2-3 hours, or even better overnight. Before you wrap the meat in foil or a baking bag, you need to put it in kiwi slices and carefully wrap it in foil or a bag. Bake for 1.5-2 hours, depending on the amount of meat at a temperature of 160-180 °C. Then allow to cool and cut into equal parts (wheels) of pork.
For the sauce
Finely chop the onion and fry it. Grate the zest. Add the well-washed and dried cranberries, zest and butter to the onion. Stir and leave under the lid on low heat for 10-15 minutes. Add honey, salt and red pepper. Let stand for another 5 minutes and add the wine, bring to a boil, but do not boil and add the starch. Remove from heat and leave for another 7-8 minutes. Then rub the sauce through a sieve and serve it to the pork.
