Composition:
● cottage cheese (2 kg),
● butter (500 g),
● eggs (8 PCs.)
● salt to taste.
Cooking
Well wrung out cottage cheese to wipe through a sieve and cook for 10 minutes in fresh milk. Then pour the mass into the bag from a double layer of cheesecloth and hang (can be put under load). While drain the fluid, take the butter, eggs, salt and heat on low heat, continuously stirring, the mass was homogeneous. Then this mass is mixed with curd and again cook on slow fire. Cooking cheese you want as long as it won't keep up with the bottom of the pan. Store it preferably in an open cool place, sprinkle a little salt. To obtain a porous cheese, you need to add a pinch of baking soda.
