Beef with cherries recipe from Mikhail Svyatopolk-Mirsky

Ingredients:

● beef (1.2 kg),

● cherry (boneless 1.5 cups),

● cardamom (2 pieces)

● flour (1 tbsp),

● vegetable oil (2 tbsp),

● cinnamon (0,5 tsp),

● salt;

Sauce:

● madera (0.5 cups),

● cherry syrup (0.5 cups),

● broth (1 Cup).

Cooking

Take a piece of boneless beef, wash it, add a little salt, cut 20-30 holes with the end of a knife and put 1 or 2 boneless cherries in each. Then put the beef in a saucepan, pour over the oil, sprinkle with a little crushed cardamom and cinnamon, put in a hot oven. When browned, again pour the oil, sprinkle with flour, put in the oven, cover with a lid. To the half-finished beef, add 0.5 cups of madeira, 0.5 cups of cherry syrup, 1 cup of broth, oil and cook under the lid, often pouring the sauce, until the beef is ready. Place on a platter, pour over the stew, garnish with cherries and herbs.
