Ingredients:

● pork (feet, ears, innards, fat, meat)

● pork guts,

● bay leaf,

● tsybrina,

● pepper,

● salt,

● garlic

● coriander.

Cooking

Wash all the ingredients well and leave to soak for a few hours. Put it in a large pot, put it in the oven for 2-3 hours. During cooking, it is recommended not to salt, you can add only bay leaf from the seasonings to preserve the taste of the innards.

Simultaneously, prepare the pork guts: clean, wash and soak in a solution of lemon, salt and pepper.

Finely chop the cooked innards. This must be done manually, only in this case the dish will have a unique taste.

After the ingredients are cut, season the mixture with salt and pepper, add the crushed garlic and coriander and leave for a few hours so that it is infused. At the final stage, the guts are stuffed, and then put under the press, so that it thus takes the necessary shape.
