Ingredients:
● wild fowl or domestic chicken,
● spices,
● butter;
Filling:
● herring fillet (salted),
● boiled eggs,
● white breadcrumbs.
Method:
Belarusian gentry pechisto was prepared from wild poultry or domestic chicken. From spices and butter, a special mixture was prepared, which was thickly rubbed on the outside and inside of the bird. No salt was used. The most important part was the filling, which was prepared from a sliced fillet of salted herring mixed with pieces of boiled eggs and white breadcrumbs in the form of small cubes. Next, the stuffed chicken is baked in the oven. The fried crispy crust and the amazing combination of unsalted meat with an unusual filling with herring gave the dish an attractive appearance and a unique taste bouquet.
